I created these today as tomorrow is Easter Sunday! Hurrah! I LOVE Easter Sunday… I love going to church with my family, making Easter egg hunts for the kids (and grown-ups!) and enjoying the thrill of spring unfurling.
Tomorrow is also a day I used to spend happily munching cream eggs and mini eggs, so I needed a wholesome alternative: something yummy to eat while my family were devouring their rare chocolate treats. Enter chocolatey, chewy, nutritious bites…

Ingredients
- 250 grams dates
- 170 grams almond butter roasted for extra flavour or raw!
- 3 tbsp cacao powder
- 3 tbsp carob powder
- 1/2 tbsp pure vanilla powder
- 1 cup pecan nuts
- 1/2 cup pumpkin seeds
- 1 tbsp extra virgin coconut oil
- 1/8 tsp salt

Instructions
- Add all the ingredients to the food processor and blend until everything is in tiny pieces. If you like you can reserve out a few pecans to roughly chop and add at the end for extra texture, but you don't need to.
- Take a scoop of the mixture and roll into a ball. Repeat until all the mixture is used up.
- At this point you could roll the balls in either some ground almonds, carob powder or dessicated coconut - totally optional!
- Pop in the fridge to firm up and eat when you need a treat!
