Ingredients
- 1 avocado
- 1/2 cup live natural coconut yoghurt
- 1/4 to 1/2 cup coconut and rice milk depending on how thick you like your mousse
- 4 tbsp carob powder or cacao, see note
- 2 to 3 tbsp maple syrup to taste
- 1 pinch salt

Instructions
- Peel and chop the avocado then place all the ingredients into your food processor and blend until smooth!
Recipe Notes
If you want to have a chocolate mousse and use cacao or cocoa then I recommend using only 3 tbsp and checking the sweetness - you'll probably need extra maple syrup. Carob has a gentle sweetness so with carob you need less!
Even my very sceptical husband has polished off a bowl full of this mousse, and admitted he would never have guessed that it contains avocado - win 🙂
