Tonight I needed an easy supper to use up some lovely veggies we had… and I really wanted something new, something I hadn’t eaten for ages… That was when I remembered that we had some risotto rice loitering at the back of the cupboard – perfect 🙂
I looked at a number of risotto recipes before deciding that none of them had the vegetables in them that I wanted to use up, so I wrote down some timings, changed them, and improvised. This was the result! We loved it…
It’s rich and creamy with a nice tang to it from the lemon. A bowl of warm comfort, I hope you enjoy it too.
