  1. First of all drain and rinse your canned chickpeas. Then lay these out on a clean tea towel to dry. This drying ensures that your falafel are light and crumbly rather than gooey in the middle… While they’re air drying you can get all the other ingredients ready.
  2. Preheat your oven to 180 degrees centigrade (fan) and put your baking tray with the 1/2 tbsp coconut oil in to heat up and melt. Take this out when the oil has melted and tip carefully to distribute the oil around the tray.
  3. Roughly chop the onion and place this and all the rest of the ingredients into your blender (including the drying chickpeas!). Blend until almost smooth – you want it to have some texture but all to come together.
  4. Now is the fun bit! Take a small handful of mixture at a time and roll into balls. Place these onto your oiled baking tray and continue until all the mixture is used up. I made 23 small balls as I wanted them to cook relatively quickly.
  5. Place into your preheated oven and cook for 25 minutes until lightly browned and crisp (though all ovens vary so do check after 20).
