It’s been another halcyon day here – the deep blue sky of a clear May day and the warm sunshine that accompanies it. Bliss! So for a mid-morning treat I made the family (+friend who feels like family, you know who you are!) this drink.
I LOVE these drinks made with coconut water, and I think this one may even be better than the berries one (though that was my favourite drink until this came along…)

Ingredients
- 1/2 ripe mango Peeled and roughly diced
- 1 400g tin pineapple chunks in pineapple juice if you have a fresh pineapple that would be even better!
- 500 ml raw coconut water

Instructions
- Pop all of your ingredients into a blender and blend until smooth. Enjoy! (Preferably with drink umbrellas to add to the exotic flavour...)
I mean, how can you go wrong with tropical fruits all whizzed up together? A tropical holiday in a cup 🙂
