Today it is chilly and drizzling so breakfast for me had to be a warm and comforting one… Enter the bowl of steaming hot porridge.
As I am intolerant to oats (even gluten free ones) I was delighted to discover rice flakes! Porridge on a cold morning is something I am so happy to be able to enjoy again, I hope you can too…

Ingredients
- 1/2 cup brown rice flakes
- 1 1/2 cups cold water just under!
- 1 tsp cinnamon
- 1 tsp coconut sugar For sprinkling on after serving
- any other toppings you like!

Instructions
- Place the brown rice flakes, water and cinnamon into a small saucepan and boil for 3 to 4 minutes.
- When it's a nice consistency pour it into your bowl and top with your choice of toppings. I love a teaspoon of coconut sugar and some coconut milk poured around the edge, but you could cook it with raisins in and add maple syrup at the end - anything you normally enjoy with your porridge!
