One of my daughters is intolerant to dairy, so I’m always thinking about how I can give her similar treats to those eaten by her friends… Enter my dairy free alternative to toffee crispy cakes!
I’m going to start by saying that this is not a health food! I try to create recipes that my body will thank me for eating, but this one? Well, it’s definitely a ‘treat’! Those of you with children who have intolerances or allergies will understand – sometimes they need a treat 🙂
So this is super sweet, gorgeously sticky, meltingly chewy and (it’s one saving grace!) packed with quinoa goodness and protein, yay! My daughters were head over heels raving about this – describing it as marshmallowy and so yummy they wanted to eat the whole tray. My son just keeps going to the fridge and getting it out for more – treat success…
And the recipe is super easy, though so moreish I think I’ll make it just for special occasions!
