I adore pizza and was so excited to finally make a pizza base that I could eat, I just couldn’t wait to load it up with toppings!
The ultimate and necessary toppings for me are artichoke hearts and green olives. I find that these replace cheese in a wonderful way! You get the delicious smooth, muted flavour and texture of the artichokes, and the salty tang of the olives = I don’t miss the cheese!! Amazing 🙂
Obviously a multitude of other toppings find their way onto my pizza too… In a piled-high hotchpotch of colours and flavours, and I love it (so not a pizza snob!).

Ingredients
- 1 tbsp tomato puree
- fresh basil leaves
- 1/4 tsp dried oregano
- 2 chestnut mushrooms sliced
- 4 pieces pineapple
- 2 cherry tomatoes
- 1/4 bell pepper
- 4 artichoke hearts tinned - just check the other ingredients and get one without added nasties
- 4 green olives in brine to add the salty tang of cheese

Instructions
- Smother the tomato puree over the pizza base and sprinkle over with herbs. Put everything else on with the artichoke hearts and olives on the top.
- Cook as per the instructions for your base, until your toppings look done. I cook mine at 180 degrees celsius for 15 minutes.
